Iced Caramel Macchiato


I pretty much hate leaving my house these days. I'm not sure if it's my vehement distaste for making myself look presentable or if it's the fact that I really am becoming an anti-social hermit in my old (just kidding) age, but occasionally even the Starbucks drive-thru seems like a burdensome amount of interaction. LOL. 

Honestly, I just want to sit at home surrounded by my family, drinking coffee, reading books, cooking and enjoying the bliss that a clean, uncluttered house brings me. 

Wait, what was this post about?  

Oh yeah, coffee! Here's a recipe for a Starbucks worthy drink that one can whip up at home and never see a single traffic light. Praise! 


First, it wouldn't be a "caramel macchiato" without caramel sauce. For a little homemade goodness... 

1/4 c. of butter

1/2 c. brown sugar

1/4 c. heavy cream

Toss those three things into your saucepan and bring to a boil (200 degrees) for 2 minutes stirring constantly. Remove from heat and allow to cool before using. 

For the drink assembly: 

Drizzle the bottom of your glass with caramel sauce. Add 1 c. of milk (whole, 2% or skim will do). Add as much or as little ice as you'd like. Add two "shots" of espresso. (I have a machine that prepares espresso for me... You could use instant espresso grounds prepared with boiling water just as easily.) Drizzle more caramel across the top. Voila! 

P.S. I'm debating hard about whether or not to post that beignet recipe. It's just embarrassingly easy and I'm trying so hard to trick you guys into thinking I'm some kind of great cook. LOL! Just kidding... As requested, I'll have that up soon.
