Honey Curry Chicken


I'm not crazy about doing food posts back to back but you guys need this recipe in your life pronto. Don't tune me out if you're not a curry fan. My husband isn't either but this was still a maaaajor hit. The recipe has been around for a while, I'm assuming, since my mom used to make it back in the day but it needs a re-visit because it's THE JAM. 

Honey Curry Chicken:  

3lbs. chicken pieces  

1/2c. honey

1/4c. melted butter* (or melted coconut oil)

1/4c. Dijon mustard  

2-4 tps. curry powder

(^^ I used 3 tsp. because I didn't want it to be overpowering for Cody.)  

Combine honey, butter, mustard and curry powder. Baste chicken with the mixture and bake at 350 degrees for 20 minutes. Flip the chicken, baste with remaining sauce and bake for another 20 minutes.  

I paired my chicken with basmati rice (which is especially good when drowned in the excess curry sauce LOL) and sautéed garlic spinach. 

I'm seriously considering making this for dinner again tonight as the mere typing of the ingredients is making me hungry.

*I used about half of the butter that the recipe calls for to be sensitive to Laura's tummy issues. I've begun introducing tiiiiny bits of butter into recipes (still no milk or cream) and she seems to be tolerating it well. My fingers are crossed that she'll be totally over her dairy allergy by 12 months!
