I am a huge fan of this delicious gourds... also, technically considered a "fruit" since it contains seeds. Butternut squash is low in fat; high in fiber; rich in antioxidants and phytonutrients; and contains potassium, B6, and carotenoids so both your heart and tastebuds will thank you.
I know part of the hassle is preparation, so I like to get these ^ sexy little packages that Harris Teeter so generously cut for me. It makes the process so easy.
I drizzle melted coconut oil (I LOVE this ^ brand because the flavor kicks butt) and sprinkle salt on top of the squash. Pop them in the oven at 375 degrees for 20-25 minutes or until the squash is easily pierced with a fork.
Sometimes (okay, ALL the time), I drizzle white truffle oil on top of the roasted veggies because I'm OBSESSED with the flavor. Seriously legit. Try it.
